All parts of the American Lotus, including the roots, leaves, and seeds, are edible. Native people have been enjoying the starchy rhizomes as a tasty treat for a long time. Moreover, the young leaves can be cooked and enjoyed as a substitute for spinach, and the immature seeds can be eaten raw.
